Banana Cupcakes with Chocolate & Cheese Chunks by Nissa


Dear Nyonya Banana 1, Nyonya Banana 2 & para NCC-ers,
Saya Newbie ni di NCC ini tapi mau ikutan nimbrung ngeramein Banana Week dong...
Semoga bisa ikut nyenengin para pencinta Banana karena ini adalah resep yang paling praktis yang pernah saya buat.
Praktis, gampang, uenak, moist tapi thick tapi gak eneg dan jadi favorit di keluargaku loh.
Resep ini biasanya paling digemari oleh yang suka Pisang campur Coklat campur Keju, makanya saya sebut BACHOCHE CHUNKS maksudnya Banana Cupcakes with Chocolate & Cheese Chunks.
Dimodifikasi sedikit dari bukunya Nigella Lawson, my favorite Baking Goddess yang terinspirasi dari bukunya Andrew Schloss, 'One-Pot Cakes' dan tips dari Tanteku yang jagoan masak.
Seperti di bukunya, ini resep cara buatnya benar-benar hanya menggunakan 1 panci tidak lengket dan 1 garpu. Yes, like I said, only one pot and one fork. Aduk-aduk jadi satu, tuang di cetakan, panggang and voila! Jadi deh. bikinnya cepet, makannya cepet, jadi gak sakit hati deh. Slama ini buatnya karena cepet bisa modifikasi macem-macem. Misalnya suamiku lagi males manis-manis, jadi makannya selagi masih panas dibelah dua trus dikasih knob of butter aja and 5 menit abis tuh 4 cupcakes sendiri hihihi. Kalau lagi hujan pengen yang panas dan anget-anget, skip the chocolate and cheese diganti ama 1/2 or 1 teaspoon of your favorite ground spice misal Mixed Spice atau Cinnamon atau Ginger atau Nutmeg tergantung how spicy you want to be. Kalau pengen asin saya kasih toppingnya Cream Cheese. Kalau pengen nyoklat banget biasa saya topping Chocolate Buttercream atau Ganache. The option is endless! Ini resep mau diapain aja biasanya si gak pernah mengecewakan loh, hehehe, biasanya... Do as you like deh, these are all my variation of the cake, but you can use your own, too. Use your imagination to create something wonderful from this simple recipe. Buat breakfast atau picnic atau dessert atau nyuguhin tamu enak enak aja koq, gak ribet juga.
So, let me introduce you to my version of this cake, enjoys guys...

Banana, Chocolate-Cheese Chunks Cupcakes (BACHOCHE CHUNKS) by Nissa~Lagilagoela
Prep. time 5 minutes, cooking time 7 minutes max, baking time 20 minutes, eating time 5 minutes for the whole batch for 3 people (doyan atau ngamuk ni??!? Wakakak..)
Makes 12 -14 buns

Ingredients:
125g Unsalted Butter (no need to be softened, straight from the fridge is okay)
200g Caster Sugar (can be reduced to 150g if you don't fancy sweet, but never bother me before)
1 teaspoon Vanilla Extract
3 overly ripe Bananas (I usually use Cavendish Banana and keep them until all the skin blacken, this will help to caramelised the bananas)
60mL Plain Yogurt
2 Large Eggs, room temp.
1 teaspoon of Bicarbonate of Soda
1/2 teaspoon of Baking Powder
300g Plain Flour (Segitiga Biru), sifted
50g Cheddar Cheese, diced
50g DCC or MCC or WCC, chopped (which ever you prefer, but DCC is my fave. You can substitute with Chocolate Chips, which ever is handy)
Lemon Drops (just few drops, not the whole Lemon loh, biar Bananas-nya gak berubah warna jadi hitam dan membuat harum pisangnya aduhai aja)

Note: The Chocolate and Cheese can be add and reduce as needed, can be substitute with Spices, or can be eaten plain.

Instructions:
1. Preheat the oven to 180C / 350F / Gas Mark 4.
2. Melt the Butter in a saucepan, then, off the heat, add the Sugar, Vanilla and Bananas plus the Lemon Drops, mashing them with a fork in the pan, let them to caramelised a bit.
3. Stir in the Yogurt and the Eggs, still using the fork, beat to mix.
4. Add the Bicarb and Baking Powder, stir in.
5. Add the Flour, stir in.
6. Finally stir in the Chocolate and Cheese (OR Spice Or what ever you want to add).
7. When the mixture's just blended (do not overmix), divide between 12-14 cupcake cases.
8. Bake for 20 minutes or until golden and springy on top. While doing this, let the smell overwhelmed the room, but don't drool in front of the oven hehehe...
9. After all done, remove from heat to the wire rack. Wait at least 5 minutes before eating it hot with a knob of butter (I always burn my tongue for my impatience) or let it cool completely to frost.

P.S. karena blognya jarang banget di update, minta logonya tapi belum diupload gak apapa ya Mods... Trus waktu itu entry ini pernah saya kirim ke gmail bananaweek tapi bounced gak tau kenapa (masuk spam mungkin?), so kalo terkirim 2x maaf banget ya...
